Following the end of Wolfgang Puck’s onsite Spago residency this past spring, the Ritz was quick to introduce a summer pop-up concept where, each weekend, a revolving roster of guest chefs offer their own three- to four-course prix fixe menu. If you're looking to get out for dinner, you can always venture to Mirabelle, a cozy, romantic farmhouse serving hearty plates like roasted elk filet with rosemary-infused couscous.
If your rustic-luxe tastes lean a little more towards the man cave, consider the Whiteface Lodge in two-time winter Olympics host city Lake Placid. The mountainside resort – built from hand-milled onsite timber – sits on six million acres of wilderness (that's more land than the state of Vermont!) just a five-minute drive from Lake Placid village and 30 minutes from Whiteface Mountain. Inside, it's all about the deep leather chairs, cast-iron fireplaces, cigars, cognac, and restaurant KANU, with a standout menu of North American fish and game.
Walk into the lobby of the Waldorf Astoria Park City and your Utah escape will begin with a gentle, earthy, leatherwood aroma. Second to the scent, you’ll likely note the bronze stag statues, crystal baccarat chandeliers, and leather and velvet antique furniture – just some aspects of interior designer Stephen Brady’s elegant mountain-meets-modern scheme. PC pastimes include hiking, biking, horseback riding, and golfing (plus, you’ll probably want to head back in January for this little thing called Sundance). Park City knows how to do lowbrow and highbrow dining right, so once you choose what kind of night you’ll be having, hightail it to Riverhorse on Main for a seasonal menu of imaginative dishes like pistachio-crusted local red trout and crispy guinea hen with boursin, or, grab a classic burger and enjoy a live acoustic show at the Silver Star Cafe.
You know your Adirondack mountain retreat is going to be on point when it was built a century ago by an OG Rockefeller (William Avery Rockefeller, to be exact). The modern-day Relais & Chateau property is tucked away on Upper Saranac Lake, just two and a half hours from Burlington, VT, Albany, NY, and Montreal. At The Point, guests “rough it” in the Main Lodge (where rooms branch off of the Great Hall) and three other buildings throughout the property, where rooms are outfitted with stone fireplaces, four-poster beds, vintage claw foot tubs, and taxidermy. The resort is great for any season, but spring and summer spell out boating, fishing, waterskiing, and, for the less sports-inclined, antiquing. Pre-dinner, carve out time for cocktails on the Elco (an adorable wooden yacht), and on Wednesdays and Saturdays be prepared to break out your best black-tie ensemble to dine on locally-sourced produce in the Great Hall.
If a couples getaway is in order, the architecturally stunning cottages and villas at Canoe Bay are your place. Three hundred private acres of Wisconsin prairie and forest convene around three spring-fed, glacially carved lakes in this blissfully isolated slice of northwestern Wisconsin (it's so removed that your GPS will probably have a tough time finding the place). Though the lakeside, treetop, and hilltop digs all feature different amenities, you’ll find some combination of vaulted ceilings, walk-in glass block showers, heated floors, cedar interiors, grand limestone fireplaces, and cantilevered private decks. Breakfast is delivered straight to your door while three-course dinners (think peach salad, blackened Alaskan salmon with sautéed swiss chard, and pecan tarts) are served in a glass-enclosed, lakeside restaurant. Spend your days kayaking, golfing, fishing, or hiding out in the cozy lodge library followed by an in-room massage (we know what we’re leaning towards).
If the vibe you’re after is best described as "English countryside manor meets Great American West ranch," then Vermejo Park was made with you in mind. The ranch, belonging to media tycoon (and billionaire) Ted Turner, just underwent a multi-million-dollar top-to-bottom renovation last year. Accommodations are spread throughout the Casa Grande (a former private residence with a full-blown ballroom and guest rooms that casually feature early 19th- and 20th-century Steinway pianos), the Costilla Lodge (25 miles from the main lodge, at an elevation of 10,200 feet), Casa Minor (another former residence with a sun porch and roomy loft), and six private guest houses with hotel-style amenities. Sitting on 585,000 acres of prime Southwestern land also has its distinct perks. Unwind in an Adirondack chair on the porch of your choosing and keep your eyes peeled for herds of elk, deer, antelope, bison, and Rocky Mountain bighorn sheep, some of which occasionally stop by the Vermejo River for a drink. As for human food and drink, there's New Mexico ranch fare from chef Wes Coffel who sources seasonal produce right from the ranch's on-site garden.
A luxury dude ranch probably isn’t something your parents or grandparents would have ever imagined, but guess what? They're here and they're amazing. On 30,000 private acres in the Platte River Valley, Brush Creek Ranch welcomes guests with a mix of traditional American West décor and luxe amenities like 400-thread-count sheets. Accommodations come in a couple of different styles: there’s the Trailhead Lodge with its soaring 28-foot ceilings and massive open hearth fireplaces, cabin suites with cozy Wyoming touches, and full 2-3 bedroom cabins with potbelly stoves and porches. Head to the Outfitters Barn to book activities like fly-fishing (the ranch capitalizes on more than 20 miles of private waters), trail adventures, archery lessons, or hiking expeditions. Post-action, guests chow down on Rocky Mountain cuisine (with a ranch twist, of course) from executive chef Emily Meyer. Campfire meals are served under the stars at the Creekside Dinner Camp while more formal three-course meals unfold in the lodge dining room — or, you can always grab a quick bite and get to socializing in the saloon (where making a dramatic entrance through the establishment's Wild West-style swinging doors is half the fun).
